泡椒雞翼 Chinese Pickled Pepper Chicken Wings

雞翼 8 Chicken Wings
薑 2slices Ginger
水 500g Water
鹽 10g Salt
紹興酒 20g Shaoxing Wine
花椒 2g Sichuan Peppercorn
指天椒 1g Hot Pepper
薑 2slices Ginger
泡椒 10g Pickled Peppers
白醋 60g White Vinegar
雞湯 100g Chicken Broth
水 100g Water
鹽 10g Salt
砂糖 30g Sugar

1 雞翼解凍備用
2 混合500g水,鹽,紹興酒及2片薑煮沸
3 加入雞翼煮沸後轉小火煮約十分鐘
4 泡椒剪半,指天椒剪碎
5 混合花椒,指天椒,泡椒,2片薑,白醋,雞湯,100g水,鹽及砂糖煮沸放涼
6 雞翼浸冰水降溫
7 雞翼淋上泡椒汁裝入器皿,冷藏約一至兩天
8 完成
