剁椒魚頭 Steamed Fish Head with Fermented Chopped Chili
大魚頭 1 Fish Head
剁椒 100g Fermented Chopped Chili
薑 2slices Ginger
蒜頭 3cloves Garlic
豆豉 7g Black Fermented Beans
花生油 適量 Peanut Oil
砂糖 ½tsp Sugar
鹽 ⅛tsp Salt
紹興酒 20g Shaoxing Wine
蔥 適量 Green Onion
豉油 ½tbsp Soy Sauce

魚頭洗淨切半
薑及蒜頭去皮切成蓉
下油燒熱鍋,炒香薑蒜蓉及豆豉
加入剁椒炒勻
加入砂糖及鹽炒勻
加入紹興酒炒勻
魚頭鋪上已炒勻的醬料
煮沸水,魚頭以中大火蒸15分鐘
在魚頭上淋上豉油
煮滾油淋在魚頭上及灑上蔥花,完成
