西檸雞扒 Fried Chicken with Lemon Sauce
雞扒 3pcs Chicken Thigh
糖 1tsp Sugar
鹽 1/8tsp Salt
雞粉 1/2tsp Chicken Powder
油 3tsp Oil
胡椒粉 1/4tsp Ground White Pepper
粟粉 3tsp Corn Starch
紹興酒 1tsp Shao Sing Chiew
蛋 1pc Egg
麵粉 60g Plain Flour
檸檬汁 35ml Lemon Juice
檸檬皮 1/2pc Lemon Zest
水 60ml Water
吉士粉 8g Custard Powder
糖 35g Sugar
鹽 1/8tsp Salt
1.雞扒切薄,加入糖、鹽、雞粉、胡椒粉、油及紹興酒拌均,之後加入粟粉拌均
2.檸檬磨皮,榨汁後加入水、糖、鹽及吉士粉拌均備用
3.中火預熱油
4.雞扒先沾蛋再沾粉
5.將雞扒炸至金黃色後切件備用
6.中火加熱檸檬醬汁,攪拌至稠身,淋在雞扒上即成
