雪菜肉絲炆米 Braised Rice Noodle with Preserved Vegetable and Shredded Pork
瘦肉 80g Lean Pork
生抽 ½ tsp Soy Sauce
紹興酒 ½ tsp Shaoxing Wine
砂糖 ¼ tsp Sugar
麻油 ½ tsp Sesame Oil
蛋白 10g Egg White
粟粉 1tsp Corn Starch

雪菜 30g Pickled Vegetables
米粉 80g Rice Noodle
青椒 ¼ Green Pepper
紅椒 ¼ Red Pepper
銀芽 70g Bean Sprouts
蒜頭 1 Garlic

生抽 2tsp Soy Sauce
老抽 1tsp Dark Soy Sauce
雞粉 ½ tsp Chicken Powder
砂糖 1tsp Sugar
水 150ml Water

1.預先浸泡雪菜及米粉備用
2.瘦肉切成絲,加入½ tsp生抽,½ tsp紹興酒,¼ tsp砂糖及½ tsp麻油拌勻
3.加入蛋白拌勻
4.加入粟粉拌勻
5.雪菜瀝乾水分後切細
6.青椒及紅椒切成絲
7.2tsp生抽,1tsp老抽,½ tsp雞粉,1tsp砂糖及150ml水拌勻
8.小火炒香米粉至乾身後盛起
9.蒜頭去皮切成蓉
10.炒香蒜蓉及雪菜,加入肉絲炒勻
11.加入青紅椒,銀芽及紹興酒炒勻
12.加入調味醬汁炒勻
13.加入已炒好的米粉炒勻,完成
