Easy homemade mixed puffed cereal squares have been a Saturday staple at my place for years. I started making them when I had three half-empty cereal boxes cluttering the pantry shelf and zero interest in turning on the oven. One pot, twenty minutes, and somehow they always disappear before I even finish cutting them.
Mixing more than one puffed grain is genuinely the best upgrade. When you combine different textures, like airy puffed rice with a slightly denser puffed corn or millet, every bite has this uneven, irregular crunch that feels way more interesting than a single-cereal bar.
I also love that this no-bake cereal treat works on two levels. It clears out pantry odds and ends, and it genuinely tastes better than a single-grain version. Bonus: cleanup is one pot and one pan.
Most of what you need is probably already on the shelf. Here is what I use and why each piece matters:
Line an 8x8-inch (20x20cm) baking pan with parchment paper and lightly grease it with butter or cooking spray. Measure all cereals into one large bowl and have your mix-ins portioned and ready. Once the marshmallow starts melting, things move fast and there is no time to go hunting for the vanilla extract.
Place a large, heavy-bottomed saucepan over low heat and add the butter. Let it melt slowly until it is fully liquid with a light foam on the surface. Resist the urge to crank the heat; butter that browns too fast will give the bars a slightly bitter undertone.
Pour in the mini marshmallows and stir constantly with a silicone spatula. Watch for the marshmallows to lose their shape completely and the mixture to look glossy and pull away from the sides of the pan in thick, stretchy ropes. That glossy sheen is your signal, not the clock.
Remove the pan from the heat immediately and stir in the vanilla extract and a small pinch of salt. Letting the vanilla hit a cooler mixture preserves its aroma instead of cooking it off.
Working quickly, pour the cereal mixture into the marshmallow and fold with a greased spatula using broad, sweeping strokes. Overmixing compresses the grains and kills the crunch. Stop folding the moment every piece is coated.
Transfer the mixture to the prepared pan. Use damp fingers or the bottom of a greased measuring cup to press the mixture into an even layer, pressing firmly enough to hold together but not so hard that you crush the puff. Scatter the flaky sea salt across the top.
Leave the pan at room temperature for at least 45 minutes. Pulling a knife through warm bars gives you ragged, sticky edges. Once fully set, lift using the parchment overhang, place on a cutting board, and cut into 9 or 12 squares with one clean downward press per cut.
The night-before approach: The bars are completely set and cuttable within 2 hours, but leaving them overnight gives the texture an extra firmness that makes them easier to pack into lunchboxes without crumbling.
Batch doubling: Double the recipe in a 9x13-inch (23x33cm) pan. Keep the layer around 1 inch (2.5cm) thick; going thicker makes the center dense and chewy rather than crispy.
Wrapping individual bars: Wrap each square in a small piece of parchment or wax paper and stack them in a container. They stay snackable for 3 days at room temperature without losing the crisp.
Pairing these bars with something cold or creamy balances the sweetness better than serving them solo. I usually set them out with a drink or a fresh component.
No-bake mixed puffed cereal squares made with a blend of puffed grains, buttery melted marshmallow, and a scatter of flaky sea salt. Ready in 20 minutes with one pot and one pan.
Line an 8x8-inch (20x20cm) baking pan with parchment paper, leaving a 2-inch overhang on two sides for easy lifting. Lightly grease the parchment with butter. Measure both cereals into one large mixing bowl, and have all mix-ins portioned and within reach before starting the stove.
Place a large heavy-bottomed saucepan over low heat. Add the butter and let it melt fully, stirring occasionally, until the surface shows a light foam and the butter is completely liquid. Do not increase the heat. The entire process should take about 2 minutes.
Add the mini marshmallows to the melted butter and stir continuously with a silicone spatula. Keep the heat at low and stir without stopping. The mixture is ready when it is completely smooth, glossy, and pulls away from the pan walls in thick, stretchy strands. Total time is roughly 4 to 5 minutes.
Take the pan off the heat immediately. Stir in the vanilla extract and a pinch of salt within 10 seconds of removing from heat. This prevents the vanilla from cooking off and losing its aroma.
Pour the cereal into the marshmallow in the pan, or pour the marshmallow over the cereal in the bowl. Using a greased spatula, fold the mixture with wide, deliberate strokes until every grain is evenly coated. Work quickly. Stop folding the moment no dry pockets remain, about 20 to 30 folds total. Stir in any mix-ins now.
Transfer the coated cereal mixture into the prepared pan. Press into an even layer using damp fingers or the flat bottom of a greased measuring cup. Apply firm, even pressure across the entire surface. Scatter flaky sea salt across the top immediately.
Leave the pan uncovered at room temperature for a minimum of 45 minutes. Once fully set and firm to the touch, lift the slab using the parchment overhang and place on a cutting board. Cut into 9 or 12 squares using one firm downward press per cut, wiping the knife clean between cuts for neat edges.
