My sister brought back two blocks of silken tofu from the Asian grocery and dared me to do something unexpected with them. Four test batches later, I landed on this green tea tofu cheesecake — impossibly light, faintly bitter from the matcha, and creamy in a way that feels almost weightless on the tongue.

Why This Cheesecake Hits Different

Silken tofu does something that cream cheese simply cannot: it gives the filling a cool, cloud-like body without any of the heaviness. Blend it long enough and the texture turns glossy and smooth, closer to a Japanese cotton-style dessert than a dense New York slice. Paired with quality matcha powder, the flavor lands somewhere between earthy and floral, with a gentle sweetness that never tips into cloying.

What I love most about this cheesecake recipe light and fluffy approach is how honest it feels. No mountains of cream cheese, no sour cream, no shortcuts that compromise the final texture. Just tofu, cream cheese used sparingly, and the kind of patient chilling that turns a simple mixture into something genuinely impressive.

What Goes Into This Cake

Every element here earns its place. Here is what I use and why each one matters.

For the Graham Cracker Crust:

1½ cups (150g) graham cracker crumbs — the classic base for this cheesecake with graham cracker crust. Go for the honey-sweetened variety for a subtle caramel note underneath the matcha.

3 tablespoons (40g) unsalted butter, melted — just enough to bind the crumbs without making the crust greasy. Press it firmly so it holds a clean slice.

1 tablespoon (12g) granulated sugar — optional, but it helps the crust set a little more solidly.

For the Filling:

14 oz (400g) firm silken tofu, well-drained — this is the structural backbone of the entire filling. Pat it dry with paper towels before blending or you will dilute the flavor. Firm silken tofu blends smoother than regular firm tofu, so do not swap them without expecting a grainier result.

4 oz (115g) cream cheese, softened — I use just a small portion to anchor the flavor and add a familiar tang. If you want a true cheesecake without cheese cream, you can push this to zero and add an extra tablespoon of lemon juice, though the result will be slightly less rich.

3 tablespoons (18g) high-quality matcha powder — sift it before adding. Clumps of unsifted matcha never fully blend out and leave bitter green pockets.

⅓ cup (65g) granulated sugar — adjust to taste after blending. Matcha bitterness varies by brand.

1 teaspoon (5ml) pure vanilla extract

2 tablespoons (30ml) fresh lemon juice — brightens the filling and helps the set feel cleaner.

1 packet (7g) unflavored gelatin + 3 tablespoons cold water — essential for a no bake cheesecake that actually holds its shape when sliced. Without it, the tofu filling stays too soft to cut neatly.

½ cup (120ml) heavy whipping cream, cold — whipped to stiff peaks separately, then folded in last. This is the step that makes the filling genuinely fluffy rather than dense.

<img fetchpriority="high" decoding="async" width="750" height="1125" src="https://dimcookguide.com/wp-content/uploads/2026/09/no-bake-green-tea-tofu-cheesecake-ingredients-flatlay.jpg" data-src="https://dimcookguide.com/wp-content/uploads/2026/09/no-bake-green-tea-tofu-cheesecake-ingredients-flatlay.jpg" alt="Overhead flatlay arrangement of silken tofu blocks, sifted green matcha powder, graham cracker crumbs, softened cream cheese, eggs, butter, sugar, whipping cream, fine mesh sifter, and whisk" data-pin-title="Simple Ingredients for Fluffy Green Tea Tofu Cheesecake" data-pin-description="Silken tofu creates an impossibly light, cotton-soft cheesecake without heavy cream cheese or eggs!
Before You Start

Drain the tofu at least 30 minutes ahead. Wrap it in a clean kitchen towel and set something heavy on top. Bring the cream cheese to room temperature so it blends without lumps. Crush your graham crackers in a zip-lock bag or pulse them in a food processor. Have your 8-inch springform pan ready, lightly greased on the sides.

Building the Cheesecake

Step 1: Press the Crust

Mix graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand and holds together when squeezed. Press it evenly into the bottom of your springform pan, going slightly up the edges. Refrigerate while you make the filling — a cold crust holds its shape better when the filling goes in.

<img decoding="async" src="https://dimcookguide.com/wp-content/uploads/2026/09/pressing-graham-cracker-crust-springform-pan-step-1-1.jpg" data-src="https://dimcookguide.com/wp-content/uploads/2026/09/pressing-graham-cracker-crust-springform-pan-step-1-1.jpg" alt="Hands pressing buttery graham cracker crumbs firmly into the bottom and edges of an 8-inch springform pan on a wooden cutting board" data-pin-title="How to Press a Tight, No-Crumble Graham Cracker Crust" data-pin-description="Press honey graham crumbs and melted butter tightly into an 8-inch springform pan before chilling. A chilled base grips the delicate matcha tofu mousse for razor-sharp slices.
Step 2: Bloom and Dissolve the Gelatin

Sprinkle the gelatin over cold water in a small bowl and let it sit for 5 minutes until it looks wrinkled and fully absorbed. Microwave for 10 to 15 seconds until just liquid and clear. Do not overheat or the gelatin loses its setting power. Set aside to cool slightly.

<img decoding="async" src="https://dimcookguide.com/wp-content/uploads/2026/09/blooming-gelatin-powder-cold-water-step-2.jpg" data-src="https://dimcookguide.com/wp-content/uploads/2026/09/blooming-gelatin-powder-cold-water-step-2.jpg" alt="Unflavored gelatin powder blooming across the surface of cold water in a clear glass bowl on a kitchen counter" data-pin-title="The Foolproof Gelatin Bloom for Clean No-Bake Slices" data-pin-description="Sprinkle unflavored gelatin over cold water for 5 minutes, then microwave for 10 seconds until clear.
Step 3: Blend the Tofu Base

Add the drained tofu, softened cream cheese, sifted matcha, sugar, vanilla, and lemon juice to a blender. Blend on high for a full 90 seconds. The mixture should look completely smooth with a deep matte green color. Taste here and adjust sugar if your matcha skews particularly bitter. Stream the cooled gelatin liquid in while the blender is still running.

<img decoding="async" src="https://dimcookguide.com/wp-content/uploads/2026/09/streaming-liquid-gelatin-matcha-tofu-blender-step-3.jpg" data-src="https://dimcookguide.com/wp-content/uploads/2026/09/streaming-liquid-gelatin-matcha-tofu-blender-step-3.jpg" alt="Pouring clear dissolved liquid gelatin into a high-speed blender spinning vibrant green matcha and silken tofu cream" data-pin-title="The 90-Second High-Speed Blender Trick for Silky Tofu Batter" data-pin-description="Blend drained silken tofu, cream cheese, sifted matcha, and lemon juice on high for 90 seconds until glossy, then stream in the warm gelatin.
Step 4: Fold in the Whipped Cream

In a separate cold bowl, whip the heavy cream to stiff peaks. You will see it hold a firm shape when you lift the beater. Gently fold the whipped cream into the tofu mixture in three additions, using a wide spatula with slow, sweeping motions from the bottom up. Rushing this step deflates the air you just built in, so be patient. The final filling should look pale green, airy, and just thick enough to ribbon off the spatula.

Step 5: Fill and Chill

Pour the filling over the chilled crust. Smooth the top with an offset spatula or the back of a spoon. Cover loosely with plastic wrap and refrigerate for at least 6 hours, ideally overnight. How long does no bake cheesecake take to set depends on your fridge temperature, but I rarely pull it before the 6-hour mark. The center should feel just barely firm with no jiggle when you gently tap the pan.

Step 6: Unmold and Serve

Run a thin knife around the inner edge of the springform before releasing the clasp. Lift the ring slowly. Dust the top with a fine layer of sifted matcha powder just before serving for a clean, cafe-style finish.

<img decoding="async" src="https://dimcookguide.com/wp-content/uploads/2026/09/whole-chilled-matcha-green-tea-tofu-cheesecake.jpg" data-src="https://dimcookguide.com/wp-content/uploads/2026/09/whole-chilled-matcha-green-tea-tofu-cheesecake.jpg" alt="A whole round no-bake matcha tofu cheesecake generously dusted with fine green tea powder resting on a white ceramic cake pedestal beside a steaming cup of tea" data-pin-title="Cafe-Style Whole Matcha Tofu Cheesecake (No-Bake!)" data-pin-description="Elegant, minimal, and dusted with ceremonial Japanese matcha powder!
Matcha Intensity and How to Dial It In

Not all matcha powders behave the same way in a no bake setting, and the difference can shift your whole cheesecake.

Ceremonial grade: Gives a vivid green color and a smoother, sweeter finish. I reach for this when I want the matcha to be the centerpiece.

Culinary grade: Slightly more astringent and darker in hue. Works well here but may need a touch more sugar to balance.

Layered matcha look: Divide the filling in half after blending. Stir an extra teaspoon of matcha into one half, then pour them into the pan alternately and drag a skewer through for a marbled effect.

Mix It Up Without Losing the Texture

Cream cheese: Swap with vegan cream cheese to make this fully dairy-free. The texture stays remarkably close.

Graham cracker crust: Use crushed Oreos for a darker, cocoa-forward base that contrasts beautifully with the green filling. This makes a great no bake cheesecake flavour variation worth trying.

Heavy cream: Coconut cream (chilled overnight, solid part only) whips up well and adds a light coconut note that plays nicely with matcha.

Sugar: Monk fruit sweetener works as a 1:1 swap if you are following a lower sugar approach.

How to Serve This Green Tea Cheesecake

Straight from the fridge, this slice is best. Here is how I like to present it depending on the occasion.

Whipped cream and fresh berries — spoon a small cloud of lightly sweetened cream onto each slice and add 3 to 4 fresh raspberries for a tart contrast.

Drizzle of condensed milk — a thin zigzag of sweetened condensed milk across the top plate adds richness without overpowering the matcha.

Alongside Japanese hojicha or green tea — serve slices with a warm cup of roasted hojicha. The toasty, low-caffeine tea mellows the matcha bitterness on the palate.

Crustless individual cups — spoon the filling into small glasses without the crust for a crustless cheesecake presentation. Set them in the fridge individually and serve with a long spoon.

Fixes for Every Common Slip

Filling too loose after chilling: The gelatin was likely overheated or the tofu was not drained enough. Moisture from undrained tofu dilutes the setting ratio. Next time, press the tofu under weight for a full 30 minutes and let the dissolved gelatin cool to just above room temperature before blending in.

Grainy or lumpy texture: The cream cheese was too cold when blended, or the blender did not run long enough. Blend the tofu and cream cheese together first for a full 60 seconds before adding anything else, and always start with room-temperature cream cheese.

Crust crumbling when sliced: Not enough butter, or the crust was not chilled long enough before filling. Use the full 3 tablespoons of butter and give the crust at least 20 minutes in the freezer before adding the filling.
